Steps

  • Heat olive oil in a small saucepan.
  • Add the onion and fry gently until softened.
  • Add the broccoli, salt, pepper, and 300ml of stock.
  • Simmer for five minutes until the broccoli is tender.
  • Stir in 50ml of double cream.
  • Blend with a hand blender until smooth.
  • Pour into a bowl and garnish with a swirl of cream.
