Steps

  • Wash the rice under cold water and transfer to a saucepan with a tight lid.
  • Mix the coconut milk and stock together and pour over the rice.
  • Cover the pan and bring to a boil over high heat.
  • Reduce to low heat and simmer for 10 minutes until the liquid reaches the level of the rice.
  • Turn off the heat and let the rice rest covered for 10 minutes.
  • Fluff with a wooden spoon and season with salt, sugar, and pepper.
