Steps

  • Preheat the oven to 200°C.
  • Cut a 15cm triangle from the pastry, place on a baking sheet, and sprinkle with cinnamon and half the caster sugar.
  • Bake the pastry in the oven for ten minutes.
  • Whisk the cream, orange juice, icing sugar, and vanilla seeds in a bowl until soft peaks form.
  • Place orange segments on a tray, sprinkle with remaining sugar, and caramelise with a blow-torch until golden.
  • Arrange oranges on a plate, top with cream, and finish with the cooked pastry.
