Steps

  • Heat vegetable oil in a heavy-bottomed saucepan until a cube of bread sizzles.
  • Pulse flour, eggs, and olive oil in a food processor until combined.
  • Knead the dough on a floured surface until smooth and cut into two pieces.
  • Roll dough to 1cm thickness and pass through a pasta machine until thinnest setting is reached.
  • Cut the pasta sheets into triangles and deep fry for 2 to 3 minutes until golden.
  • Drain on kitchen paper and dust with cinnamon and icing sugar.
  • Transfer to a large dish to serve.
