Steps

  • Soak two wooden skewers in water for 10 minutes.
  • Preheat the oven to 200°C.
  • Heat olive oil in an ovenproof pan and fry carrots with cumin for 4 minutes.
  • Roast carrots in the oven for 12 minutes until tender then stir in lime juice and seasoning.
  • Combine lamb cubes with olive oil, paprika, and chilli powder in a bowl.
  • Thread lamb onto skewers and roast on a tray for 10 minutes until browned.
  • Serve the lamb kebabs alongside the roasted carrots.
