Steps

  • Preheat the grill to its highest setting.
  • Fry chopped onion and crushed garlic in olive oil until softened and let cool.
  • Combine chicken mince with the cooled onion mixture in a large bowl.
  • Add chilli, spices, parsley, and seasoning to the bowl and mix well.
  • Shape the mixture into walnut-sized balls.
  • Thread three balls onto each soaked wooden skewer.
  • Grill the koftas for 8 to 10 minutes while turning regularly.
  • Baste with melted butter and lemon juice and grill until fully cooked.
  • Mix yoghurt, mint, cucumber, and lime juice in a separate bowl.
  • Place a kofta skewer and a portion of rice onto each flatbread.
  • Drizzle with dressing and garnish with extra parsley and lemon wedges.
