Steps

  • Wash rice until water is clear and soak in tepid salted water for 30 minutes.
  • Drain rice and add to a pan with cold water 2cm above the rice level.
  • Boil rice then simmer covered for 10 minutes until water is absorbed.
  • Fry shallots, onions, garlic, and ginger in oil until golden.
  • Set aside one tablespoon of the onion mixture for garnish.
  • Add chicken to the pan and stir fry for 4 minutes.
  • Stir in spices for 1 minute then simmer with yoghurt for 2 minutes.
  • Add sugar, raisins, and rice then cover with a towel and lid.
  • Steam over low heat for 10 minutes.
  • Rest for 5 minutes before serving with the reserved garnish.
