Steps

  • Mix all relish ingredients in a bowl and leave to marinate.
  • Heat oil in a pan and cook diced lamb, onion, garlic, cumin, turmeric, and bay leaf for 5 minutes.
  • Add vinegar, stock, and butter, then simmer for 12 minutes until lamb is tender.
  • Heat oil in a separate pan, add cubed potatoes and spices, cover, and cook for 12 minutes.
  • Heat a griddle pan, brush lamb chops with oil, and chargrill for 5 minutes per side.
  • Plate the potatoes, top with stewed lamb, and serve with chops and relish.
