Steps

  • Heat olive oil in a saucepan and fry the onion over gentle heat until softened.
  • Add the garlic and cook for one minute.
  • Add the potato and celeriac and season with salt and pepper.
  • Pour in 300ml of hot vegetable stock and simmer for ten minutes until vegetables are soft.
  • Cool the mixture slightly and blend using a stick blender until smooth.
  • Serve in a bowl and garnish with chopped chives.
