Method

Heat the sugar in a small copper pan until dissolved.

Increase the heat and allow the sugar to turn golden brown.

Slowly stir in the cream to create a caramel sauce.

Cook the pineapple in the caramel for 2 minutes on each side and remove.

Cook the brioche in the same pan for 30 seconds on each side and remove.
