Steps

  • Sweat the onion, garlic, and green peppers in olive oil for 10 minutes.
  • Cover and stew the vegetables gently for 15 minutes.
  • Add parsley, saffron, potatoes, bay leaves, peppercorns, tomatoes, tomato paste, wine, and water.
  • Cover and simmer the mixture for 10 minutes.
  • Add the squid and clams and simmer for another 10 minutes.
  • Layer the fish, prawns, and mussels on top without stirring.
  • Season with black pepper, cover, and cook for 10 minutes until shellfish open.
  • Discard unopened shellfish and garnish with coriander before serving.
