Steps

  • Wring the grated potato in a clean tea towel to remove excess liquid.
  • Combine the grated potato and cold mashed potato in a mixing bowl.
  • Mix in the flour, baking powder, melted butter, salt, and pepper.
  • Gradually beat in the 200ml of milk until the mixture forms a thick batter.
  • Fry the bacon in a large pan with oil for 6-8 minutes until crisp.
  • Fry spoonfuls of batter in the bacon oil for 3-4 minutes per side until golden brown.
  • Serve the boxties with two bacon rashers and a drizzle of maple syrup.
