Steps

  • Boil all jelly ingredients except gelatine in a saucepan and simmer for six minutes.
  • Strain the fruit mixture through a sieve into a bowl.
  • Stir the squeezed gelatine into the fruit mixture and let it cool slightly.
  • Divide jelly into six tumblers containing two blackberries each and chill in the fridge.
  • Cook berries, lemon, and sugar for eight minutes, then set aside to cool.
  • Whisk cream, icing sugar, and vanilla to soft peaks and fold into the fruit.
  • Spoon the fool over the set jelly, garnish with fruit, and serve.
