Steps

  • Score the duck skin and season with salt and pepper.
  • Place duck skin-side down in a cold pan and fry over medium heat for 12 minutes while draining fat.
  • Turn the duck and add honey, soy sauce, sesame oil, plum, and chilli to the pan.
  • Simmer the sauce until reduced and cook the duck for 4 more minutes.
  • Serve the duck over lettuce and potato cubes with pan juices drizzled on top.
