Steps

  • Blend yolks, vinegar, and mustard in a food processor.
  • Slowly add the oil while blending until the mixture thickens.
  • Season with yuzu juice, chili sauce, salt, and pepper.
  • Heat oil in a deep fryer or heavy pan to 190°C.
  • Dip chicken in flour, then egg, then breadcrumbs to coat.
  • Fry goujons for 2 to 3 minutes until golden brown.
  • Drain chicken on kitchen paper and serve with mayonnaise.
