Steps

  • Place the salmon into a large roasting tin and cover with water.
  • Add the lemon juice, rinds, peppercorns, and bay leaves to the tin.
  • Bring the water to a boil and remove from heat immediately.
  • Set aside for 30 minutes until the salmon is cooked through and opaque.
  • Transfer the salmon to a platter and remove the skin from the top side.
  • Slice cucumber into semi-circles and layer over the salmon to mimic scales.
  • Arrange salad leaves around the fish.
  • Pipe mayonnaise over and around the salmon before serving.
