Steps

  • Blend the almonds in a food processor until ground to a fine powder.
  • Add 50ml of water and blend into a smooth paste.
  • Incorporate the bread and garlic and blend again.
  • Gradually add the remaining 450ml of water while the motor is running.
  • Slowly pour in the olive oil with the motor still running.
  • Mix in the sherry vinegar and season with salt and pepper.
  • Serve the soup in bowls topped with golden raisins.
