Steps

  • Bring cream, milk, sugar, vanilla pod, and seeds to a boil in a pan.
  • Stir softened gelatine into the boiled mixture until dissolved and strain into a jug.
  • Pour mixture into moulds and refrigerate until set.
  • Boil red wine, crème de cassis, sugar, rosemary, and spices, then simmer for 30 minutes.
  • Cook plums and figs in the liquid for 3 minutes, then stir in blackberries and cool.
  • Serve the poached fruits alongside the chilled panna cotta.
