Method

Trim the fig stalks and cut a cross into the top of each fruit.

Place figs on a square of foil and shape it into a parcel.

Add vanilla seeds and pod to the figs, drizzle with 30ml cider, and seal the parcel.

Oil the base of the parcel and cook in a hot frying pan for 5 minutes until softened.

Mix the yoghurt, thyme leaves, lime juice, and vanilla extract in a small bowl.

Serve the open foil parcel with a dollop of the thyme yoghurt in the center.
