Steps

  • Preheat the oven to 200°C.
  • Heat olive oil in a small ovenproof pan and fry halved tomatoes with sugar for 4 minutes.
  • Place a puff pastry circle over the tomatoes and tuck in the edges.
  • Bake for 10 minutes until golden and invert onto a plate.
  • Fry the goats' cheese in a separate pan until browned and place atop the tart.
  • Wilt the spinach with boiling water, then drain and squeeze dry.
  • Blend the spinach, oil, and basil in a food processor until smooth.
  • Season the oil and drizzle it over the tarte tatin to serve.
