Steps

  • Wash jars in hot water and dry upside down on a tray in a 160°C oven for 15 minutes to sterilise.
  • Heat the onions and tomatoes in a large heavy saucepan over a low heat.
  • Add chillies, ginger, star anise, vinegar, and sugar.
  • Boil the mixture then simmer for 30 minutes until very thick and a spoon leaves a clear trail.
  • Stir in the fish sauce and cook for 3 minutes before spooning into jars.
