Steps

  • Preheat the oven to 190°C and line a 12-hole muffin tin with paper cases.
  • Mix the eggs, sugar, milk, and melted butter in a large bowl.
  • Sift the flour, baking powder, salt, and cinnamon into the bowl and stir to combine.
  • Add the chopped apple pieces and mix lightly into the batter.
  • Quarter-fill each case with half the mixture and top with pieces of toffee.
  • Cover with the remaining mixture until the cases are half full.
  • Bake for 30 to 35 minutes until the muffins are risen and golden.
  • Transfer to a wire rack to cool before serving.
