Steps

  • Sift bucketwheat and plain flours into a large bowl and add salt and yeast.
  • Heat crème fraîche and milk in a saucepan until lukewarm.
  • Whisk egg yolks into the warm milk mixture and combine with the flour.
  • Mix thoroughly, cover with a towel, and leave to rise in a warm place for one hour.
  • Whisk egg whites in a clean bowl until stiff peaks form.
  • Fold egg whites into the dough and leave to rise for a second hour.
  • Melt butter in a hot non-stick frying pan.
  • Place 1.5 tablespoons of mix per blini into the pan.
  • Cook until firm and golden-brown on both sides.
  • Cool on a wire rack before serving.
