Steps

  • Blend coriander, mint, ginger, garlic, salt, chilli, lime juice, and fish sauce in a food processor until smooth.
  • Place salmon in a dish, pour over half the sauce, and marinate for 20 minutes.
  • Cook rice in a pan of boiling water according to package instructions.
  • Steam bok choi on the bottom layer and salmon on the top for 6 to 8 minutes.
  • Drain rice, stir in sliced chilli and chopped coriander, and season with salt.
  • Serve salmon and bok choi over the rice with reserved sauce and lime wedges.
