Steps

  • Heat the olive oil in a frying pan and add the curry paste.
  • Fry the paste for 2 minutes then stir in 50ml of white wine and the lime juice.
  • Cook for 2 minutes and add 150ml of double cream, 150g of mussels, and chopped coriander.
  • Simmer for 5 minutes and discard any mussels that have not opened.
  • Pour the mixture into a warm bowl and garnish with additional coriander leaves.
