Steps

  • Mix sugar and 120ml water and bring to a boil.
  • Add chili flakes, simmer for 40 minutes, and set aside to cool.
  • Brush spring onions with sesame oil and griddle for 2 minutes.
  • Combine chicken, coriander, chilli, garlic, lemongrass, ginger, soy sauce, lime leaves, and lime juice.
  • Marinate the mixture for 20 minutes.
  • Form small tablespoon-sized patties with your hands.
  • Fry patties in sesame and cooking oil for 5 minutes per side.
  • Serve patties over griddled spring onions with a side of sauce and fresh coriander.
