Steps

  • Rub the tuna steak with olive oil and season both sides with salt and pepper.
  • Sear the tuna in a very hot frying pan for two minutes per side until browned.
  • Add soy sauce and honey to the pan and caramelise for 30 seconds.
  • Remove from heat, sprinkle with sesame seeds, and set aside.
  • Heat 500ml of vegetable oil in a heavy-bottomed saucepan until hot.
  • Fry rice noodles for a few seconds until puffed, then drain on kitchen towels.
  • Serve the tuna on a warm plate with the crispy noodles in a separate bowl.
