Tuna

Method

Rub the tuna steak with olive oil and season both sides with salt and pepper.

Sear the tuna in a very hot frying pan for two minutes per side until browned.

Add soy sauce and honey to the pan and caramelise for 30 seconds.

Remove from heat, sprinkle with sesame seeds, and set aside.

Heat 500ml of vegetable oil in a heavy-bottomed saucepan until hot.

Fry rice noodles for a few seconds until puffed, then drain on kitchen towels.

Serve the tuna on a warm plate with the crispy noodles in a separate bowl.
