Steps

  • Heat olive oil in a medium frying pan over a high heat.
  • Fry all of the spices for one minute.
  • Add the chicken pieces and fry for two minutes until browned.
  • Add the cubes of sweet potato and fry for one additional minute.
  • Stir in tomato purée, onion, and broccoli and cook for one minute.
  • Add tomato seeds, juice, and yoghurt, then simmer for five minutes.
  • Spoon the curry into a bowl and garnish with fresh coriander.
