Steps

  • Preheat the oven to 200°C.
  • Roll the pastry to 5mm thick and cut into nine rectangles.
  • Place pastry on a non-stick sheet, dust with icing sugar, and bake for 15 minutes.
  • Whisk the double cream to soft peaks, then add vanilla and caster sugar and whisk to stiff peaks.
  • Blend strawberries and lemon juice for the sauce, then stir in sugar and sieve into a bowl.
  • Slice Each cooled pastry rectangle in half horizontally.
  • Layer three pastry pieces per serving with cream and sliced strawberries between each.
  • Dust the final layer with icing sugar and serve with the strawberry sauce.
