Steps

  • Slice the duck flesh finely and discard the bones.
  • Heat the vegetable oil in a wok or frying pan.
  • Fry the ginger and garlic until golden to flavor the oil, then discard them.
  • Stir-fry the celery, chilli, and half the spring onions for 2 minutes.
  • Add the duck and stir-fry for 1 more minute.
  • Cover noodles with boiling water in a bowl, then drain immediately.
  • Add noodles to the wok and toss over high heat.
  • Toss in the bean sprouts and Chinese rice wine.
  • Add the hoisin, oyster, and soy sauces and toss well.
  • Serve garnished with the remaining spring onions.
