Steps

  • Cut kernels from the cob if using fresh corn.
  • Blanch frozen corn in boiling water for five seconds and drain.
  • Heat a wok or large sauté pan until hot.
  • Add the oil, salt, corn, and chillies and stir-fry for one minute.
  • Add the pepper, sugar, and 50ml of stock.
  • Continue to cook for three minutes and serve immediately.
