Steps

  • Slice the melon finely and blanch in boiling water for two minutes.
  • Drain the melon well on kitchen paper.
  • Heat a wok over high heat and add the oil until smoking.
  • Stir-fry the chillies, ginger, garlic, shallots, spring onions, and black beans for two minutes.
  • Add the melon, sugar, wine, and 150ml of stock.
  • Bring to a boil then reduce heat to medium.
  • Cover and simmer for eight minutes until the melon is tender.
  • Drizzle with sesame oil and serve immediately.
