Steps

  • Preheat the oven to 200°C and line a tray with baking parchment.
  • Roll out the pastry on a floured surface to 30cm x 23cm.
  • Cut the pastry into 24 rectangles using four longitudinal and six transverse cuts.
  • Crumble the Stilton into a bowl and crush it with a fork.
  • Place a teaspoon of cheese onto each rectangle and brush edges with beaten egg.
  • Fold the pastry over the cheese, crimp the edges to seal, and place on the tray.
  • Brush the tops with egg, sprinkle with parmesan, and pierce each with a knife.
  • Bake for 10-15 minutes until the parcels are golden-brown.
