Method

Preheat the oven to 200°C.

Simmer double cream and milk in a large saucepan.

Add potatoes, butter, most of the Stilton, garlic, salt, and pepper.

Simmer the mixture gently for five minutes.

Transfer to an ovenproof dish and top with remaining Stilton.

Bake for 15 minutes at 200°C until golden-brown.
