Method

Heat vegetable oil in a small frying pan and sauté chopped spring onion until soft.

Add garlic and chilli to the pan and cook gently for one minute.

Preheat the grill to high.

Stir in tomato paste, ground ginger, sugar, and red wine.

Simmer the mixture for six minutes until thick and sticky to form the jam.

Top the griddled ciabatta slices with Stilton cheese.
