Steps

  • Preheat your oven to 200°C.
  • Place the haddock on a baking sheet and coat with mustard.
  • Pulse breadcrumbs, Stilton, parsley, and 15g of butter in a processor until blended.
  • Press the crumb mixture onto the fish fillet.
  • Bake for 8 to 10 minutes until the topping is golden and fish is cooked.
  • Melt remaining butter in a saucepan with dill and lemon juice over low heat.
  • Season the sauce with salt and pepper.
  • Serve fish with lemon wedges and the butter sauce poured over.
