Steps

  • Boil the cider in a pan until the volume reduces by one third.
  • Whisk the Stilton into the cider until the cheese is completely melted.
  • Mix cornflour and cold water into a paste and stir into the cheese mixture.
  • Fold in the fresh chives immediately before serving.
  • Drizzle bread chunks with olive oil and fry for 5 minutes until golden and crisp.
  • Place the fondue in a bowl and arrange the bread croûtes around the edge.
