Steps

  • Preheat the oven to 180°C.
  • Blend butter and sugar in a food processor until the mixture looks like breadcrumbs.
  • Add eggs one at a time and blend thoroughly between additions.
  • Fold the flour and baking powder into the wet mixture.
  • Butter and flour a 15x35cm non-stick baking tray and remove any excess flour.
  • Arrange orange slices in the tray, drizzle with maple syrup, and top with the sponge mixture.
  • Bake for ten minutes until golden-brown and a skewer comes out clean.
  • Turn out onto a plate, slice, and garnish with mint, more orange slices, maple syrup, and icing sugar.
