Steps

  • Blend all jerk marinade ingredients in a food processor until a smooth paste forms.
  • Coat chicken wings in the marinade in an ovenproof dish and chill for at least four hours.
  • Preheat barbecue or grill to 190°C.
  • Grill wings for 12-15 minutes, basting with marinade until juices run clear and meat is cooked.
  • Grill whole red chillies for 3-4 minutes until golden-brown grill marks appear.
  • Dredge cut sides of orange quarters in sugar and grill for 3-4 minutes until caramelized.
  • Serve three wings with two orange quarters and one grilled chilli per plate.
