Steps

  • Preheat the oven to 200°C.
  • Crush peppercorns and mix with lemon juice, honey, mustard, and garlic.
  • Place chicken in a roasting tin and pour over the marinade.
  • Sprinkle with salt and roast for 45 minutes, turning halfway through.
  • Discard preserved lemon flesh and slice the skins into strips.
  • Toss lemon skins with olives and parsley.
  • Serve chicken topped with the lemon and olive mixture.
