Steps

  • Rub the steak with olive oil, season, and griddle in a hot pan for 3-4 minutes per side.
  • Rest the steak for three minutes.
  • Dry potato chips and deep fry in hot vegetable oil for 3-4 minutes.
  • Remove potato chips with a slotted spoon and drain on kitchen paper.
  • Soak courgettes in milk for 3-4 minutes, dredge in flour, and deep fry for 5-6 minutes.
  • Drain courgette chips on kitchen paper.
  • Refry potato chips for five minutes until very crisp, drain, and sprinkle with sea salt.
  • Serve the steak with both types of chips on a plate.
