Steps

  • Preheat the oven to 220°C.
  • Sauté the peppers and onion in a pan with oil until softened.
  • Stir in the blanched potato and heat for 2 minutes.
  • Roast the vegetables in the oven for 12 minutes.
  • Mix the chives, onion, parsley, and Stilton in a bowl.
  • Cut a pocket into the steak and fill it with the cheese mixture.
  • Sear the steak in a hot pan for 2 minutes on each side.
  • Roast the steak in the oven for 5 minutes or until cooked to preference.
  • Stir the remaining parsley into the vegetables and serve with the steak.
