Method

Heat a heavy bottomed saucepan one-third full of vegetable oil until a breadcrumb sizzles.

Deep-fry the potato chips for 8 to 10 minutes until golden.

Remove the chips with a slotted spoon and drain on kitchen towels.

Flatten the steak between two sheets of cling film using a mallet or rolling pin.

Heat oil in a frying pan and cook the steak for 2 to 3 minutes per side.

Remove the steak from the pan and let it rest for a few minutes.

Fry the egg in the same pan for 2 minutes until the yolk sets.

Serve the steak and fried egg alongside the piled chips.
