Steps

  • Clean the first squid by removing tentacles, ears, and skin.
  • Score the inside of the squid body in a diamond pattern.
  • Season the squid with salt and pepper and brush with olive oil.
  • Chargrill the squid on a hot griddle pan for one minute per side.
  • Prepare the second squid by removing the beak and slicing the body into rings.
  • Season all remaining tentacles and rings with chilli, salt, and pepper.
  • Fry the squid in smoking hot olive oil for two minutes.
  • Serve both preparations together garnished with lemon wedges.
