Steps

  • Heat olive oil in a frying pan and fry onion until softened.
  • Chop half of the sausage and add it to the pan.
  • Add rice and a splash of boiling water, stirring until liquid is absorbed.
  • Stir in spinach and chilli until the leaves begin to wilt.
  • Fry the remaining sausage in a separate pan until golden-brown and cooked through.
  • Spoon rice mixture onto plates and top with the whole sausage to serve.
