Steps

  • Preheat the oven to 200°C.
  • Melt the butter in a large pan and fry the plums briefly.
  • Add the spices, water, wine, syrup, and caster sugar to the pan.
  • Simmer for 6 to 8 minutes until the plums form a thick sauce.
  • Transfer the plum mixture into a deep ovenproof dish.
  • Mix the flour and demerara sugar in a separate bowl.
  • Rub the butter into the flour mixture until it looks like breadcrumbs.
  • Sprinkle the topping over the plums and bake for 20 to 25 minutes until golden.
  • Allow to cool slightly before serving with cream.
