Steps

  • Place the couscous in a large bowl and cover with 300ml hot vegetable stock.
  • Seal the bowl with cling film and let it sit for four minutes.
  • Fry the chorizo, peppers, and garlic in a pan over medium heat for three minutes.
  • Stir in the tomato, herbs, olives, lemon juice, and olive oil and cook for two minutes.
  • Combine the chorizo mixture with the prepared couscous in a bowl and season with salt and pepper.
  • Transfer the salad to a serving bowl to serve.
