Steps

  • Blend mayonnaise, grated parmesan, and white wine vinegar in a food processor until smooth.
  • Add mustard, garlic, anchovies, paprika, and chilli to the processor and blend until combined.
  • Adjust seasoning with salt and pepper and thin the dressing with water if necessary.
  • Combine the sliced chicken, kidney beans, and onion in a large bowl.
  • Add 90ml to 120ml of the dressing to the bowl and mix well to coat ingredients.
  • Place one lettuce leaf on each plate and spoon the salad mixture into the leaves.
  • Garnish with chopped anchovies, croutons, parmesan shavings, and black pepper.
