Steps

  • Heat olive oil in a frying pan and cook onion and leek for 5 minutes until soft.
  • Add garlic and cook for one further minute.
  • Stir in tomato and chilli flakes and cook for two minutes.
  • Add courgette and basil then season with salt and pepper.
  • Mix the sauce with the cooked pasta and garnish with parmesan and remaining basil.
