Steps

  • Remove the stalks from the blackcurrants.
  • Place the fruit in a saucepan and cover with 250ml of water.
  • Bring to the boil and simmer for 20 minutes until tender.
  • Combine the sugar and lemon juice with the fruit.
  • Boil the mixture until it reaches 105°C on a sugar thermometer.
  • Cool for several minutes then pour into hot, clean, sealed jars.
